My sweet tooth is tingling… It must be due to the fact that National Ice Cream Sandwich Day is today!! Of course, I never need an excuse to try some new treats, but with this sweet “holiday”, I wanted to try a little something different.
Instead of going out and finding the best ice cream sandwiches, I plan on making my own! And these are not your average ice cream sandwiches. I recently got my hands on the Marbled, Swirled, and Layered cookbook, and this book is brimming with uniquely tantalizing recipes. And while I’d love to make them all, I figured I’d start with one of the most fitting ones given the upcoming holiday.
Enter the Vanilla and Peach-Bourbon Ice Cream Pie with Honey-Cornflake Crust. YUM!!! Doesn’t the name just make you want to start drooling right away?? This recipe includes a revamped vintage recipe for cornflake crust as well as a tasty peach bourbon ice cream made with Four Roses Bourbon. To make things even more interesting, the cookbook offers some recipe alternatives to mix in, and my eyes especially widened at the idea of making Soft and Chewy Oat and Blueberry Cookies to stuff the peach bourbon ice cream in between for the ultimate ice cream sandwich.
I cannot wait to #handcraftthemoment with these fabulous Four Roses-inspired recipes—they seem too delicious to ignore. I love that Marbled, Swirled, and Layered gives you endless inspiration for creating foodie magic, and I hope to experience these new flavors sooner rather than later!

Now I am inspired to get creative with my ice cream sandwiches. I made mine on waffles and I always loved them that way.
I did not know there was such a day. Ice cream in any way shape or form is always appreciated around my house. This wouldn’t last very long everyone would want a piece and come back for seconds.
The chocolate cake on the cover there looks amazing. The ice cream sandwich cookies you’re describing sound like they’d be flavorful.

I had no idea there was a national ice cream Sandwich day! I think we will be celebrating it in many ways. I think it might dip some in some sprinkles and chocolate chips and whatever else I can find. I like days that you can celebrate dessert! Those are the best days.
